Seasoned Pumpkin Seeds Make A Delicious Salad Topping or Quick Healthy Snack

Aloha salad lovers. I can’t remember when I first discovered the delicious taste of tamari seasoned pumpkin seeds but I recently discovered how amazing they taste on top of any salad or as a healthy snack. Nutrition for me and my clients has to be simple with no hype or nonsense.  The food I eat has to give me energy and be easy to prepare.

Pumpkin seeds have long been known as a great source of protein, about 12g for one cup. Along with a reasonable source of Omega 3’s and 6’s, and a decent amount of potassium, ( 588mg ) this raw green seed offers a great deal of nutritional value. These little seeds are also loaded with zinc, amino acids, essential fatty acids, and iron.

Although the calorie count is a bit on the higher side, like 285 per cup, if the serving for your salad is a quarter (1/4) that’s only 71 calories. I’ll take it! Think of it as sustained energy in the bank for later.

You certainly can enjoy raw and I do occasionally in my energy trail mix, but to add a little zing and flavor, I reach for the low sodium tamari seasoning. This is usually found in the Oriental food section of most health food stores, near the soy sauce.

The brand can find easily is organic and gluten free, no MSG called San J Tamari

First I preheat the oven to 350. I take two cups of organic, raw pumpkin seeds place in a bowl and lightly drizzle over the tamari seasoning, just enough to coat. I turn over with a spoon and then spread out on cookie sheet with sheet of parchment paper for about 5 minutes. They brown and bake quickly so keep a close eye on them. You may hear a few pops and then they’re ready. Let them cool on the cookie sheet

Now I have a delicious salad topping or incredible snack to put in my energy mix.

My salad dressing of choice is a quick blend of olive oil and balsamic vinegar with a teaspoon of honey and honey mustard, and a twist of fresh pepper and sprinkle of chia seeds.

Our garden on Maui has a melody of healthy dark greens, such as kale, spinach and a very exotic dark spinach called tatsoi along with a huge spicy bed of arugala and other greens that add so many amazing flavors. I will also cut a little basil and cilantro to add the variety of flavors.

I try to tell my clients and friends that nutrition and food doesn’t have to be complicated, simple is better, especially if it’s as good as these pumpkin seeds.

Balance and Strength Training Pays Off for Maui Windsurfer

Aloha Windsurf Enthusiasts,

I’m so grateful of the kindness and feedback that every so often comes my way, as it is the greatest reward. My clients inspire me everyday with their dedication to their water sports and health. As a trainer who specializes in water sports performance and windsurfer myself, it’s pretty awesome to get emails like the one below written by my client, Mike Abrams of Pukalani, Maui.  Mahalo Mike!

“To all those water sports men and women it may concern,

After my sailing sessions yesterday and today, I simply felt compelled to write this endorsement about Suzie’s training methods, that I have been blessed with for almost 5 years. I am the luckiest windsurfer on the planet to have found Suzie as my personal trainer. Every day, I find that I am performing moves and controlling my board and sail better than ever before. I am a very humble person, with I hope a low ego and no expectations of how I am going to sail with each session.

However, I can honestly let my fellow sailors know that I have improved, and sail with much more confidence and balance skills than ever before, no matter what the conditions seem to be. Like today, I sailed an hour and a half and never missed one jibe and yesterday sailed in overpowering conditions, and performed jibes on the outside (while most folks fell into the over choppy and gusty blown water) with total control.

I can actually feel my legs lifting up from a squatted position (because of having to keep the board on the water in over powered conditions around the turns) towards windward to help keep my balance. My top suggestion is to eat something prior to the party that combines protein and fiber to fill you up before you charge to front of the buffet line. Drink lots of water and leave the elastic pants or skirt at home!

Buidling Your Dynamic Core with Suzie Cooney of Suzie Trains Maui for Naish

( All Rights Reserved 2011)Want to explode your paddling core strength? You got it. These exercises require that you understand how to engage your core muscles both before and during the entire set. You become the stabilizing factor as you perform these movements. Also, I’d like you to pay close attention to the tubing or TRX Rip Trainer cord so that it is always taut and under tension throughout the entire series. I call this “time under tension”. If you “let go” of this concept, or your core, you won’t benefit fully from this workout.

Training Note: It’s your choice if you wear shoes or not, or if you train on an unstable surface such as the beach (which is more challenging). I try to train barefoot so that I can mimic the feel of the board. If working with weights, be careful not to drop them on your feet! Everyone’s training needs and experience will vary, so the number of sets/reps you perform is up to you. Typically, if you are just starting out, try 1-3 sets with 10-12 reps each, making sure you are always in perfect form.

Equipment: TRX Rip Trainer, medium/heavy resistance tube
Progression Variables: change the platform you are standing on or use a heavier tubing or cord

In this photo, I’m using the new TRX Rip Trainer with the heavier cord.

Starting with your feet solidly on the ground about shoulder width apart, pointed straight ahead and with good posture, tie the cord to a secure object (Dave’s truck worked great!). Holding the TRX bar at shoulder width and just below the top of your shoulders, begin to engage your core by drawing in your abs and hold while making sure to breathe. Remember, safety loop! Don’t death grip the bar, but start far enough away from post with enough tension that will require you to stabilize the bar and your body. Rotate your body to the right while core engaged, then slowly return just before your start position (critical) and repeat.

Progression 1: Stand on your BOSU or other unstable platform. (An INDO Board on top of a Gigante Disc works well too). Now do the same movements while on the BOSU. Wow…crazy!

Progression 2: Secure a light, medium, or heavy gauge tubing to your secure object and perform the same movement as above, however, this time you’ll need to steady the tubing with your left arm locked. Gently clasp the tube with one hand, but do not grip too heavily. Place a bit of tension on the tube and begin the rotation. Remember “time under tension”. “I moved to Maui to enjoy my passionate, favorite sport of windsurfing, and to raise my skills to the next level. Because Maui offers the best ocean conditions in the world for windsurfing, you have to be even more physically fit to tackle the more difficult open ocean conditions, including big waves. Windsurfing daily is simply not enough to help raise your sailboarding skills to higher levels. I knew I needed to strength train with a professional, but not with just any weight lifting coach. I wanted to find someone who also windsurfs because I figured they’d be much better at understanding how to tailor the workouts to better fit my favorite passion. I was in a real world of hurt because my old personal trainer gave up his business for another career. Then one day at the surf shop, my prayers were answered, when I found Suzie Cooney’s CPT business card, that said ‘Surf, SUP, Windsurf, & Kite Stronger NOW

 I called and arranged an appointment. It was one of the best steps I have ever taken which has had nothing, but HUGE positive effects on improving my windsurfing skills and increasing my level of enjoyment on the water. Suzie comprehends our beloved sport of sailboarding so well, that she knows exactly what core training exercises, and balance procedures to execute during our workouts. She actually works-out with me for many of the exercises, and makes absolutely certain that each exercise is performed correctly, with the right breathing, and body posture.

 On most training days, I usually will sail the same day, and I can immediately experience the benefits of Suzie’s tailored training. As an example, my light wind water jibes are much easier now and I hardly ever fall into the water. I also notice, that I can make stronger jumps, as well as make more aggressive cut backs on wave faces. I attribute all of these improved skills to Suzie’s training. I feel very certain that without Suzie Q’s training, I would still be a much weaker sailor. Suzie is one of the most professional, caring, brightest people I have ever had the pleasure to work with. I am so lucky to have one of the best trainers one could ever dream about, for ocean sports. Once you train with Suzie you will start sailing stronger, and happier right away.
